Weekend Girls Trip/Random Ramblings

As I mentioned in my last AFTF, I took a little road trip this weekend to the lovely town of Pittsburgh (Steelers fans, aside…) to visit my homegirl Jess.  I was supposed to go that way for a work meeting, but it got moved to another week and instead of canceling at the last minute, I decided to make the trek simply for pleasure instead of business.

I knew it would be a great trip, because Jess is one of those people who I just naturally have a great time with.  And as someone who is pretty much never in the market for new friends (I have a hard enough time keeping in touch with the few I have…), that’s a rare occurence.  And as I’d hoped, I even got to spend a little QT with the adorable Lacy (Jess’ cousin) who I also immediately loved, and not just because we share 99% of the same wardrobe.  As requested, they took me to the much-tweeted-and-instagrammed-about Chica Loco Tacos, where we swooned over the best freaking queso I’ve ever had, and shopped our little hearts out in the adorable Shadyside.

Jess and I managed to have ourselves quite the little makeup party Saturday morning, reminding me yet again the sadness that I endure by never having had a sister.

Just imagine all the wonderful things you could borrow/steal from one another!  Clothes. makeup, boys, attention… the list is really endless.

As anticipated, I didn’t do much shopping for others, but did manage to finally purchase my first pair of Wunder Unders. (Happy early birthday to meeee!)  I also went a little crazy in Sephora, buying two Laura Mercier products that I’d been lusting after the last few weeks.  (I seriously need to stop it with the YouTube beauty videos, it is not doing great things for my wallet or the ever-shrinking amount of free space left in my makeup drawer.)  And please don’t get the wrong idea here- I am in no way in a position to be blowing money on fancy makeup, but I tend to get a little loose in the purse strings around the holidays… But other than that, I scored an adorable Rachel Roy dress in Macy’s for next-to-nothing and so it was a pretty successful trip on the shopping front.  I did pick up a few gift sets at Trader Joe’s, but I can’t discuss these things because some of the recipients may be reading… but just know that I’ve been on a diet of Speculoos candy bars and kale spinach dip for the last 2 days as a direct result of said TJ’s trip.

Back to the topic of beauty videos, I’ve actually been toying with the idea of doing a vlog about some of the most recent things I’ve bought, but I’m one part unsure if it would be all that interesting, and two parts terrified.  I always love seeing what beauty products other people are using/buying, but don’t really know if mine would be all that video-worthy.  Anyways, I’ll keep stewing about it for a few days and see if I get the time or the balls to actually do it.

On a random purchase-related note, I did pick up a few things from the Neiman Marcus collection for Target, but have decided to return all of it. Having said that, I’m 99% sure there’s a photo of me somewhere in Target’s customer service area, depicting me as a repeat returner.  I swear they see me coming from a mile away…  It’s kind of a problem.

Easiest Post-Workout Dinner

So I am officially back in the proverbial workout saddle.  I’ve tried pretty much every class that piqued my interest at the new gym, and I am totally smitten.  I’m also hella sore.  And I just said “hella”.  Are the kids still saying that?

Speaking of smitten, OMG.  Dear Bone Suckin’ BBQ Sauce, you complete me.  Like, let’s just skip past the dating phase and you can move in, and pick out curtains and I can ask you to rub my back every night.  Oh how happy we’ll be!

But oh wait… it’s not sold anywhere nearby. <Insert emotional breakdown>

There is an upside to being sad about the fact that something delicious you’re eating for the first time ever isn’t readily available to you.  You’re already shoving your face, savoring every last drop, so emotional eating is just a natural form of consolation.  Two birds, one stromboli.

And it’s a good thing this stromboli was SO easy.  As Rachael Zoe would say: Lit-trally.  I cooked the chicken in the crockpot all day and nestled it up inside a little blanket of pillowy pizza dough and tossed ‘er in the oven.  Because in addition to being reminded how sore spinning and kickboxing can make a girl, I am also reminded of the ravenous appetite that accompanies such classes.  Feed me, Seymore.

BBQ Chicken Stromboli
Cook time total: 4 hrs 20 min
Serves: 3-4
You’ll Need:
3 large boneless, skinless chicken breasts
16 oz jar of your favorite BBQ sauce (reserve 1/4 of the jar)
1/4 cup chopped onion
1/2 cup reduced-fat mozzarella cheese
1 premade pizza dough (I used Trader Joe’s brand)
olive oil

Directions:  Place chicken breasts and onions in the crockpot, cover with 3/4 jar of sauce, cover and cook on high for 4 hours.  Once finished cooking, shred with two forks and mix until sauce is evenly distributed.  Prehead oven to 425.  Roll out dough into a large oval, and with a pizza cutter, slice little tabs on each side of the dough.  Place shredded chicken in the center, cover with cheese, and drizzle with remaining sauce.  (You can use the rest here or save some for a dipping sauce).  Gently fold tabs up and over the chicken, criss-crossing them as you go.  Fold in the ends to secure the filling.  Spritz the top of the stromboli with a little olive oil, and place in the oven to bake for about 15 minutes.  Once the top is golden brown, remove and let cool for about 5 minutes before slicing.

I should also mention that the dough I used for this came from Trader Joe’s,  yet another item that now eludes me.    It’s all probably for the best since I could have easily taken this entire stromboli to the face.  And if Brandon tried to stop me, I could just use some of my new facy kickboxing moves on him.

A Few Things Friday

Look at me posting 3 times this week! Obviously my life has slowed down a little, but in the best possible way. So let’s get into it, shall we?

1. I’m finally feeling more confident in my new job, which is going amazingly, for anyone who cares to know. I feel like I am exactly where I am supposed to be, and things have just kind of naturally aligned for me. I love that I get to be creative, and it’s constantly encouraged. I have to say, it’s extremely refreshing. I hope it’s not just some “honeymoon phase”, but I have a feeling that I actually just totally lucked out.

2. My workout schedule is insanely different these days than it was a year ago. I’ve started taking yoga twice a week at an awesome studio that I have quickly become addicted to. As I mentioned before, a lovely little Groupon brought me here, but I have a feeling I’ll be sticking around for awhile. There is something about yoga that not only makes me feel calmer and less anxious, but stronger and leaner. I miss a lot of the classes I was going to at my old gym, but I’m really enjoying just going a little slower pace, taking long walks with my pup and not killing myself trying to lift insane amounts of weights. To keep things balanced I’ve started really cutting back on carbs and the whole drinking wine 4 5 6 nights a week I had going for a while there, and it’s actually going pretty well. We’ll see how long I can keep it up…

3. One of the best parts of Brandon’s job is that some of their clients randomly give them free shit. (And here I thought the biggest perk would be marrying someone who be handy around the house.) Like this week, we got an entire bag of veggies from one of his client’s CSA’s. It was my first experience with one of these, but let me tell you, I am about ready to join one. Look at all the stuff we got!

Inside this monstrous bag was kale, lettuce, spring onions, fresh garlic, strawberries, parsley, radishes and carrots. All organic, and best of all, ALL FREE!

And like a good little girl, I cleaned and chopped it all up right away so I would (hopefully) use it all and not let is just rot away in my crisper.

Seriously, how awesome is that? I even made a delicious dinner by sauteeing some kale, onions and fresh garlic with a little olive oil and wine tossed with some Trader Joe’s pasta I had from my DC trip.

Speaking of…

4. Since I’ve finally been to Trader Joe’s, it’s like I’ve tasted the forbidden fruit and I want more! Brandon is obsessed with the 3 cheese marinara sauce and I think a world war might break out in my office when I finally run out of dark chocolate-covered espresso beans. I think I might have to start making bi-monthly trips just to stock up on the goods. Plus it won’t hurt I’ll maybe get to spend some QT with a few lovely ladies

Anyways, that’s all I got for ya on this lovely Friday. I know this post is a lot more sunshine and rainbows than my usual sarcastic drivel, but it may be due to my recent shift into a more om state of existence, but then again it might be due to the 2 glasses of wine I’ve had tonight. Hey, I said I was cutting back, not cutting it out completely.
