A Few Things Friday

*Please note the lack of a tree skirt as Mac thinks it’s just a giant toy for him to  drag to the basement.

1.  In 4 days it will be Christmas and I have less than 25% of my shopping done.  In fact, I have continued to buy more things for myself and completely overlook selecting gifts for those I love.  I suppose you could call that being selfish, I call it treating yo’self. And yet one more reason that I think I am completely unprepared for someday mothering a small child.

2.  In 5 days I will be turning 30.  I’ve decided that this year I don’t want to do anything grand, just have a low-key day at the house and maybe have family and close friends stop over for drinks/appetizers.  Probably in yoga pants.  Is this what 30 is?  No longer having any desire at all to wear something sparkly or fluffy and drink over-priced, under-poured cocktails and have people shower you with attention, but instead just never leave your house and drink quietly at home?  Actually that sounds pretty amazing.  Let’s do this, 30.

3.  Did you guys see the season finale of Dexter?  I mean… I can’t even… just wow.  (In a good way.)

4.  Speaking of TV, my newest addiction is Shahs of Sunset on Bravo.  (Obviously.)  This show is everything.  (I feel like Stefon when I say that.)  I kind of “hate watch” it, just so I can complain about how hideous the amount of money these people have is, and how I wouldn’t event “want to be that rich” (hahaha), but I just can’t stop watching it.  And the new chick? I mean, I just can’t even wait to see what this Hot Mess Barbie brings to the table.  If you haven’t seen this show yet, please start watching it.  At least so I have someone to talk smack about it with.

5.  I owe you guys a gigantic “thank you” times 1,000,000 for all the feedback  on my vlog debut.  You are just the best.  I had a lot of fun doing it (hours of learning how to edit video aside) and hoped so much that it wouldn’t be a giant failure.  So just knowing that you guys enjoyed it even a little makes it totally worth it.  I am definitely going to do more, and hopefully get a little less awkward each time.  So stay tuned and let me know what else you’d like me to vlog about!

6. I probably won’t blog again until after, so Merry Christmas, lovahs!  I hope that whatever holiday you are celebrating, it is filled with family, friends, good food, great booze and lots of love.

Fish and Chips

Anyone out there?

Ok, good.  A few of you.  You’re my favorites anyways. (Shh, don’t tell the others.)

I hope you all had lovely New Years celebrations and if you remember everything, well then you’re one step ahead of me!  Kidding… maybe. Once again I am a bad blogger and don’t have any fun pictures to share yet (I’ve broken 2 cameras at parties and try and only use my phone now…) but hopefully I’ll get some up on Facebook sometime this week.  It’s probably for the best, anyways…

So before all the holiday festivities began, I got to celebrate one of my favorite holidays of all:  Biffmas.  To explain- Biffmas is Christmas for *Biffs.   Simple, really.

So to celebrate, Mary and I decided to make one of our favorite things for dinner: fish.  Since well…our husbands both hate it and we love it.

Another fun biff fact is that Mary and I both love salt and vinegar chips.  Like, don’t leave a bag around us, we will straight murder it.  So I called my mom, got a quick recipe idea from her, picked up a bag of S&V chips at the grocery store and ran home to start prepping, aka smashing things.

The prep for these only took a few minutes, so we sent them into Ovenland and promptly got to opening our Biffmas gifts.  Nobody knows you like your biff, so as you can imagine, some pretty sweet gifts were exchanged.  For example:

I also got a few other things but clearly these two were my faves.

Speaking of amazing, we loved this fish.  The salt and vinegar chips were really crispy after we oven-fried them and they also added great flavor.  Plus since you only use about a cup of chips to coat two large fillets, it’s still a pretty light dish.  Of course meaning you can drink more wine, duh.

But that’s just how we roll on Biffmas.

Oven Fried Salt and Vinegar Chip Fish Fillets
(Adapted from How Sweet It Is)
You’ll Need:
2 large fish fillets (I used Haddock because it was on sale, but tilapia or cod would work too)
1 cup Salt & Vinegar chips (I used Lay’s)
1 egg white
Salt & pepper
Cooking spray

Directions:  Line a baking sheet with foil or parchment paper, and lay a baking rack over top, spraying rack with cooking spray.  Preheat oven to 400.  Place egg white in a shallow bowl and chips in a large Ziploc bag.  Smash potato chips until broken into very small pieces.  Pat fillets with a paper towel and sprinkle generously with salt and pepper.  Coat fillets in egg white, then in potato chips until completely covered.  Gently lay coated fish fillets on top of the baking rack, and place in the oven for 15-20 minutes, or until fully cooked.
Serve with steamed broccoli, tossed with a wedge of Laughing Cow Cheese and a side of risotto.

The real bonus here was the bag of chips leftover, that somehow managed to last more than 24 hours.

It was a Biffmas Miracle.

(And as a side note, I fully believe this would also be a delicious coating for chicken tenders, should you not be of the fish-loving persuasion.)

*For those of you unfamiliar with the term “biff”, it’s a nickname my best friend and I gave each other for two reasons:  The first being we wanted to have someone in our group called “Biff”, and the second is no one would let us call them that, so we took BFF and made it “Biff”, so there you have it.  Ok 3 reasons, we also love Back to the Future.

A few things.

1.  I am the worst present wrapper in the world.  For real.  It’s embarrassing.

2.  My dad does not play around with Christmas eggnog.  I think I might have actually breathed fire for a second last night.

3.  I got this in the mail yesterday from my beautiful and sweet sister-in-law (also named Jess, yes we shared the exact same name for about 2 years.)

I know it’s kind of hard to tell, but it’s a little white dog made out of carnations and the little dog is wearing glasses in addition to a mini Santa hat.  AKA the cutest freaking thing ever.

4.  We saw Christmas carolers last night!!  I am 28 (for 3 more days anyways *ahem*) and I have never ever seen carolers before. I sort of thought maybe they only existed in old-timey movies, but no my friends.  They are quite real.  If only we had some figgy pudding to bring them.
