Will You Accept This Chicken?

A little late to the party, I started watching The Bachelor about 3 seasons ago.  It started innocently enough- I heard some girls talking about it at work, and never one to be left out of a conversation, I ended up DVRing the next week’s episode.  And the next… and the next.

So 4 seasons later (including 2 seasons of Bachelor Pad and minus one season of the dreadful Bachelorette- Ashley) I am still watching.  It was bound to happen, given my undying affection of all things trashy reality TV.

On the bright side, I feel less embarrassed than I did when I was watching, say, Rock of Love (I, II and the Bus Tour season- FACE TIME!) and it gives me something to fill my otherwise mundane Monday evenings with.  Plus, is there anything better than a house full of catty women, all vying for the affection of one man, swiftly changing from manic highs after their “dream dates” to violent emotional breakdowns?  I think not.

So last week, I had my friends Mary and Cydney over for a little dinner and a lot of Bachelor.  I wanted to do something that represented the show… you know, girly and kind of fancy, but at the same time, the “dinner next door”.  So I ask you…

Do you accept this stuffed chicken breast?

Mozzarella Stuffed Chicken
Cook/Prep Time: about 50 minutes
Serves: 4

You’ll Need:
4 large chicken breasts
2 eggs, whisked
1 cup all-purpose flour
2 cups seasoned panko breadcrumbs
8 medium-sized mozzarella balls
Salt & pepper
4 oz jar of pesto, store-bought or homemade
6 oz (half a box) of whole wheat spaghetti pasta

Directions:  Preheat the oven to 350.  Place the flour, eggs, and breadcrumbs in 3 shallow bowls.  Spray a baking rack with cooking spray, and place over a baking sheet, covered in aluminum foil.  Season the chicken breasts with salt and pepper.  Dredge chicken breasts in flour, then egg, then cover in breadcrumbs.  Slice long ways through the side of the breast, careful not to cut through to the other side.  Place to mozzarella balls inside the chicken breasts, along with a tsp. of pesto.  Bake for 40 minutes, or until chicken is cooked through.  Meanwhile, prepare pasta according to directions and toss with pesto.  Serve alongside stuffed chicken.  Garnish with tomato slices.

This was a great dinner.  Not too difficult to make, and packed with flavor from the pesto.  Plus who doesn’t love a breaded chicken breast with a cheesy center?

I feel like me and this dinner really have awesome chemistry.  Like I might be falling… in love?  I really think this could be the one!

  1. Haha I am also a lover of the Bachelor. I think it is an awful and pretty sad show, but I just can’t keep watching. Plus, I don’t know who my mother would gossip about it with if I didn’t watch it …

  3. Oh geez… I forgot I watched a season of Rock of Love. Oh and Flavor of Love. Someone really needs to take the remote away from me.

  5. One of my favorite things to make is chicken stuffed with asparagus or spinach and mozzarella, coated in parm. Stuffed chicken is just so good.

  6. Bahaha I’m hooked on that stupid showwww toooooooo. Every season I tell myself I “won’t let it happen again” and here we are, weeks into it, and who’s watching Ben the Bachelor and these crazy ladies week in and week out *sigh* ME. Gets me everytime. Love love love these stuffed chickens too, the pesto is a fabulous addiion!

  7. I only watched the first episode this year because I can’t DVR it (too many other Monday shows). I keep meaning to catch up OnDemand, but it hasn’t happened.
    That chicken though, I would make time for. (Worst grammar I’ve used in awhile, but whatevs.)

  8. I haven’t watched The Bachelor in ages. I won’t even lie and pretend I don’t like it. Trashy tv is one of my favorite things. I just never manage to catch it. There seems to be a lot of crazy going on this season too, I feel like I’m missing out on some quality programming.

  10. Ok, but here’s the thing: does anyone actually find the bachelor this season attractive?? Maybe he’s just not my type, but…no thanks. I would take this chicken even without the trashy reality TV on the side- it looks awesome! And I miss pesto. I should probably find some soon.

  11. I got into the bachelor late in the game, and it was Jake’s season. Oddly enough, it was my (straight) male coworker who got me hooked, and we spent all season discussing Vienna’s ridiculous antics over Tuesday coffee breaks. I pulled myself out of it after one cycle (bachelor + Ali’s season of Bachelorette), but I tune in when I can’t find anything else on!

  12. For some reason I’m loving this season. Maybe it’s because my life is all about baby and this now amuses me to no end to see the trainwrecks.

  13. Oh yum! This looks absolutely delicious! I love stuffed chicken. :) I absolutely hate this season for some reason. I am just not a Ben fan. I watched one episode and I was done. I never do that! I usually love that show.

  15. I watched The Bachelor last season and just didn’t get it. I’m more of a Rock Of Love type of girl. I like my hot messes extra messy, drunk and trashy.

  16. I absolutely accept this chicken. You are a classy host. I usually just order take-out when I have friends over for copious amounts of bad TV. But mozzarella and pesto are practically separate food groups for me so I think I might have to try to whip this up one night when I’m feeling extra motivated!

    I watched it for a couple of seasons but after the whole Jake/Vienna mess I quit. Apparently last season was the one I had to watch with all of the Bentley drama. The chicken looks terrific, you can never going with stuffing it (twss?)

  18. I’ve never gotten into the Bachelor, but I DID get consumed by a little ditty called Joe Millionaire. Baha, I am an embarrassment.
