I was thinking the other day (scary, I know).  But what was weighing heavily on my mind was that I just don’t eat enough eggs.  (Yes, my thoughts are generally food-related.)  Eggs are delicious and I tend to forget about them.  I usually only use them for random baking projects, or if I’m feeling froggy on a Sunday morning, I’ll whip up some omelets. 

So as images of unhatched poultry danced through my head, I had a moment of clarity.  You see, this I know to be true:

I. Love. Pizza.

Breakfast pizza.  I realize I’m not the first person to develop this concept, and I’ve read many a blog post about it, but for some reason I never got around to making it.  I know that somewhere in my gigantic brain (uh, why else would I have such a large head?) this little  nugget of an idea was implanted and unearthed itself at this very moment.  And it was good.  The thought, that is.  Because the pizza… well the pizza was great.

Breakfast Pizza
You’ll need:
Pizza dough
1/3 cup diced green pepper
1/3 cup diced onion
6 slices Canadian bacon, diced
1/2 cup mozzarella cheese
6 eggs

Directions:  Prepare your pizza dough and preheat oven to 400 degrees.  Cook the crust (plain) for about 8 minutes, then remove and raise temperature to 500.  Meanwhile, in a large sauté pan, cook the onion, peppers and bacon until veggies are soft.  Spoon toppings over crust, then add mozzarella and crack 6 eggs right on top of the cheese.  Cook pizza for another 8-10 minutes, watching carefully as to keep the egg yolks slightly runny.

Yowza.  Heaven.  I did overcook the eggs a little so they weren’t really runny, but still delicious nonetheless.  And all the more reason to try, try again… and again… and again.  Brandon almost had to fight me for a slice.  But luckily I was in a bit of a breakfast pizza-induced haze and let him have some.  Oh that marital compromise.

  1. Big heads are clearly a sign of genius…which is why we both have them. Duh.

    This looks good but I’m not a runny, over easy type of girl. eh well.

  2. My roommate and I actually found ourselves with an overabundance of eggs recently.There was a lot of breakfast for dinner going on last week- which wan’t an issue because I love them!

    ANd breakfast pizza is awesome. I went the scrambled route with mine bc I’m not an over easy girl, either (I’m with ya, Kace!). Either way, I’m sure either result is just as tasty as the other.

  3. Eggs are one reason why I could probably never be vegan, as I eat them a few times a week for breakfast. Truth be told, it’s mostly because of convenience, as I take my breakfast to work. Hard-boiled eggs are easy to bring as part of that meal, but I look forward to weekends when I can actually scramble their deliciousness.

    More puppy, please, Giant Head Woman.

  4. i’ve started putting fried eggs on my pizza…so good. but for some reason i’m too afraid to just crack a raw egg on my pizza! i gotta be braver!

  5. I’ve never had breakfast pizza or eggs on pizza. I’d be willing to try. It looks interesting. Love the pup shot! :)

  6. Breakfast pizza sounds great (especially with canadian bacon), however cracking eggs over pizza seems slightly scary to me :)

  7. Runny eggs on pizza is just not something I can wrap my head around yet. Maybe in time.

  8. PUPPY!!!! I’m not a runny egg fan either, but I think your bfast pizza would be wonderful with scrambled eggs, too. Plus, I think Scott would love me forever. If I get engaged after making this you’ll get a personal thank you. ;)

  9. I like my pizza eggs to be cooked medium to hard, so this sounds perfecto to me. Yes, perfecto.

    Eggs are amazing on pizza eh? I’ve tried that a couple times, and its pretty much the best idea ever.

    I’m a fan of eggs. I eat them for breakfast almost daily. Just the whites though. I don’t like the yokes unless they’re super runny and I have toast to eat them with :)

  13. Oh man, I want to eat that right now! Eggs are good on burgers, too, just in case you need another excuse to make them. :)

  14. oh my gosh. I’ve been wanting to make one of these forever, but the problem is….. I would eat the entire pizza in one sitting. and then I’d hate myself for a few hours.

  15. i love an ooey gooey egg on my pizza, breakfast style or just a regular old margarita pizza. it’s the perfect addition.

  16. That pizza looks awesome! I am a big egg person…and since we have chickens I kind of half to be. They lay 5 eggs a day and it is just me and Keith. We eat a lot of eggs.

  19. I can totally get on board with this kind of pizza. My sister got a fried egg on her burger the other day and I was like whaaa, but it looked weirdly delish!

  20. Putting eggs on frozen is just about the only cooking I do. Eggs are the main reason I failed as a vegan. Oh, and I also love my uggs.

  21. Pretty sure this egg-on-pizza concept will be making an appearance on my dinner menu next week! What a great way to bulk up the protein of the meal too, yum, can’t wait!

    As for eggs, I pretty much have them every morning and am getting bored with them. I usually do scrambled or if I’m feeling ambitious, an omelet but I love the idea of breakfast pizza. I think my issue is I’m not awake when making breakfast so I would have to have at least two cups of coffee before making it.
