Oh hey.

Have you heard?  My favorite season is here.  NBD.

It’s only the best season ever.  No, not fall (which I do love) but a different kind of season.  Tis the season where large men don exoskeletons of protective pads, skin-tight spandex pants, thick plastic helmets and beat the living crap out of each other.

The season where I root for players on teams I’d normally rather throw hot garbage at, only to earn bragging rights among my friends for a week of standing victoriously in the winner’s circle of our fantasy league.  Smack talking never sounded so good.

The season where freezers are filled to the brim with an astronomical amount of chicken wings and refrigerators are packed to the gills with beer.  A time where it’s acceptable to start drinking at noon (“I’m sooo stressed about the game!”) and eating nothing but various types of grilled and fried meats is par for the course.  (Speaking of spandex pants…)

That’s right y’all.  It’s football season.  I will probably lose at least 50 twitter followers by the time it’s over due to my constant updates and slanderous Cowboys remarks, but that’s cool, it’s how I roll.  So in honor of my favorite season, I’ve decided that each week I will highlight a recipe that is a delicious alternative to the heavy wings and pizza that will no doubt surround you.  And which I might add, you should continue to enjoy, because, hey…  Let’s be honest.  Football is just more enjoyable when there’s wing sauce on your chin.

Garlic White Bean and Dill Dip
Prep time: 45 min to roast garlic, less than 5 min. to prepare
(Adapted from How Sweet It Is)
You’ll Need:
15oz can of cannellini beans, rinsed and drained
Large handful of fresh dill, stems removed
2 bulbs roasted garlic
4 T olive oil
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. ground cumin

Directions:  In a food processor or blender, combine beans, dill, garlic, salt, pepper and cumin, slowly adding olive oil.  Spoon into a medium bowl, drizzle with a little olive oil and garnish with a sprig of dill.

This has quickly become one of my new favorite party foods.  It’s very garlic-y, so if you like, you could probably just use one bulb.  I choose to enjoy as much garlic as possible at all times.  Some days I am surprised my husband actually kisses me…  But then I do make his coffee every morning and sometimes I’ll throw his wet clothes in the dryer for him, so I suppose it’s just another example of marital compromise.

Thankfully this was pretty much the perfect storm of an opening weekend in my opinion.  Eagles won, Cowboys lost and so did the Giants.

And on a quick serious note…

I just want to say… I love you guys.  Words cannot express how much all your kind words and outpouring of support means to me, and how much it truly helped me through what has been one of the hardest weekends I’ve ever had.
When I started blogging, I knew that there would be a million things I would love about it, but the people I’d meet… well, I just never imagined how many amazing new friends I’d get out of the deal.  So thank you times infinity with sugar on top.

Quick, change the subject before I get all weepy again…. Who’s your NFL team?

  1. I’m a Chicago Bears girl. None of the Missouri teams really sparked my interest. Clearly I was meant to live here for so many reasons. :)

    And I LOVE garlic. It’s embarassingly good. And can go on everything.

  2. I refuse to get into football until baseball is over, and considering it’s still going on, I am bitter to every sports’ station for getting that simple fact. However, when the time comes, my favorite NFL team is hockey. Okay, that doesn’t work for you either, so I’ll go with the Lions and then U of M football. However, that’s if there’s no baseball on.

    Garlic is my perfume and my drug. I love it so, so much…

    But actually, being so close to Carolina, most of my football exertion is spent yelling at my boys in blue. I’m a lost Eagle in a sea of Carolina Panthers.

  7. Umm…. DUH. Who’s my team? Like I have to answer it.

    I alway seem to pull for the Ravens too, though. Like their attitude down there, and being AFC it’s not a conflict of interest. So I was happy when they routed the Steelers Sunday!

    This is my favorite season, too. Sweatpants and a couch all weekend and the most delicious food imaginable. Although, I’m telling you, College FB is where it’s at. LOVESSSSSS.

  10. ooh yumm. i love dill and have vowed to use it more in my everday cooking. so thanks for the new recipe! i look forward to more of your recipes cuz me and a friend of mine kind of compete when it comes to bringing creative dishes to PSU football tailgating. I’m gonna win this year…

    And to be honest I’m not a huge NFL fan – I do watch college games though. But I’m sure that will all change when I get married because Vishnu is ALL ABOUT it. His goal is to get me to join a fantasy league next year. That should be fun!

  12. I don’t watch football. Sometimes I go to the games here, but that’s the Canadian league and apparently its very different. I do like the guys with the black and orange helmets though. They’re cool looking.

  13. Hey girl…saw a post over the weekend and I didn’t know if you had actually put your pup down. If so, I am so so so sorry. My heart aches for you. My animals are my world (even above the hubby) — I can only imagine the sadness. But I bet he had a pretty spectacular life while he was here!

    That looks fab! I’m hoping to have some football parties this year, although no one wants to watch the Sooners with me. Sniff.
    I don’t have an NFL team yet, still waiting for that magic moment when one captivates me. For now it’s sort of the Bears and whoever is playing the Cowboys.

  15. I’m more of a college fan, but if I had to choose, I pick Cam Newton… I mean… uhh, the Panthers.

  16. Oh, you know I love da Bears. And for the record, that’s totally how I say it. All real Chicagoans who are worth their weight (which is a lot- we eat deep dish here) do. Stereotypes exist for a reason. I love dip. The issue is that I also love chips, and that is my preferred dip vehicle. Carrot stick? What the heck is that?

  19. YES!!! I’m glad I’m not the only girl who’s pumped for football season!! I can’t wait to make dips and chili and slather myself in cheesy goodness!

    And even though I live in NC now, I’m still a hard core browns fan. I don’t care if they suck. Here we go brownies, here we go! Woof woof!

  20. Gotta go with the Bears as well. Mostly because I’m from Chicago, but also because I think I look awesome in orange and blue. It’s a genius color combo. You should try it. I’m a litte nutso with the fantasy football myself this year. I’ve always been in two leagues but joined a third this year. Between that and my day job, there’s not much time for anything else. And I’m so okay with that!

    P.S. This dip is absurd. In a good way. I could eat it for breakfast, lunch and dinner. And just might.
