Winning Combination

I don’t know about you, but unless I have some magnificently delicious leftovers from the night before, my lunch usually consists of a few of the same things.  These being: soup (oooh!) or salad (ahhhh!)

I know, I’m crazy like that.  Total wildcard.

And since I eat pretty much the same thing for lunch approximately 324 days a year, I like to add variety where I can.  Throw in some thins, a pinch of that, you know what I’m sayin. 

So in trying to spruce up the old lunchski the other day, and also trying to use up the rest of my tofu, I threw it on a soft bed of lettuce & herb mix (Seriously if you haven’t tried this yet, it is amazing.  We’re talking a whole new level of salad.)  I also had some strawberries to use up and then it hit me to throw in a few leaves of basil.  Life. Changing.

The combination of the sweetness  of the strawberries and the bold flavor of the basil was such a pleasant surprise.  Others may have discovered this dynamic duo, however, this was a first for me and I just felt the need to share.  

Strawberry Basil Salad
You’ll Need:
2 cups lettuce & herb salad mix
1/4 cup sliced strawberries
Handful of fresh basil leaves, washed and patted dry
T goat cheese or feta
1/4 cup grilled tofu, chicken, shrimp or whatever your heart desires
Homemade Dijon Dressing:
2 T extra virgin olive oil
1/2 tsp dijon mustard
1 tsp lemon juice
Salt & pepper to taste

Again, I realize we’re not talking rocket science here, but if you haven’t stumbled upon this tasty combo, I highly recommend it! 

I also highly recommend you rent every season of It’s Always Sunny In Philadelphia, and watch it. Even if you already have, watch it again.  Preferably whilst eating this salad.

  4. I almost always take the same lunch to work–a bowl of brown rice with chickpeas, butter and asparagus (and varying Salt-Free Mrs. Dash seasoning.) There are a couple reasons for this, but the most important is that it’s easy, quick and requires only 30 seconds in the microwave. I refuse to wait for the microwave for long, use the office toaster or spend any time assembling some other meal with plastic silverware and paper plates. Yes, I’m a dork, but it does the job and I can enjoy something better for dinner and later that night (I have many feedings.)

    Sometimes I will take a huge junk salad in the summer with every raw cut veggie I can find, avocado, raw corn and either cottage cheese or plain Greek yogurt as the “dressing.” Yum. And it requires no office kitchen.

    • I require multiple feedings too and that sounds like a pretty delicious lunch. And we finally got a new toaster oven in our office but for the last few months the state of the old one was pretty questionable, and I already set one fire there which is now refered to as the “microwave incident” and I’d rather not discuss it….

  5. Leftovers are always my favorite lunch, but since I’ve not been cooking at all – lately it’s been 100% TJ’s..

    I like putting either strawberries or blueberries in my salads. They add a nice sweet contrast to the veggies and dressing.

    • It’s tied for me with Arrested Development but definitely is one of my favorites of all time. Once someone told me I remind them of Dee….and at first I was like “that’s AWESOME!” and then I was like “I wonder if that person hates me….” either way, it’s a win in my book.
