It’s no secret that a girl’s gotta have her chocolate every now and then. Lucky for me (get ready to be shocked and amazed) I don’t actually crave chocolate all that often.
I know, I know. It’s totally weird and people always give me a nasty look when I tell them that, but let me assure you, I’ve got my vices. They may not come from a can of frosting or bowl of brownie batter, but they exist. Like oh, say pizza? Or and entire bag of chips and guacamole? (See? Still judging me?)
However, there are times when no matter how much salty or snacky foods I’ve got in my pantry, there is only one thing I can think of to satisfy my cravings and it starts with “c” and rhymes with “Snookie”. (Note: the onlything I like about Snookie is that her name rhymes with cookie. Oh crap, did I just give it away?)
Guilt-Free Dark Chocolate Chip Cookies
(Adapted from Chocolate-Covered Katie)
1/2 cup whole wheat flour
Pinch of salt
1/4 tsp baking soda
1/3 cup dark chocolate chips (use dairy-free to make these vegan)
2 T light brown sugar
1 T organic can sugar
1/2 tsp vanilla extract
1 T vegetable oil
1/4 cup unsweetened Vanilla Almond Milk, add more if needed
Directions:Preheat oven to 375 degrees. Mix dry ingredients, then wet ingredients and combine. Spoon dough onto greased cookie sheet and bake for about 8 minutes. Place cookies on a wire rack to cool. Serve with zero guilt and milk. (Makes about 8 medium-sized cookies.)
Feel free to eat your cookies without stacking them like a game of Jenga. Truth be told, I always see other bloggers take these cute stack-y pictures so I thought I’d give it a try. Instead my husband walked in and asked me what the _____ I was doing with my cookies.
