Biff Night (Baked Tilapia Recipe)

This is me and my little blonde biff (Mary):

Not only do we take beautiful photos where we look like lovahs, but we are also the self-assigned nickname masters, steadily looking for friends to assign awesome new names to.  (You’re all welcome.)  Our most recent mission was to find a “Biff” because a. it’s awesome (obviously) and b. she’s slightly obsessed with Back to the Future.  We forced it on my husband for a day but much to his relief it didn’t quite take.  Then we realized what we were looking for had been right infront of us all along…BFF=biff (phonetically speaking).  So every week or so we get our handsome dogs together, who are also conveniently biffs, and have Biff Night.  We drink wine, make dinner and watch ridiculous Lifetime movies…or at least plan to watch them but end up talking through the entire thing.  I’m sure we’re missing some really riveting plot lines about single-mothers-turned-hookers and pregnant cheerleaders.  So last night we watched The Kids are Alright (my formal review: “meh…”) and made a delish dinner that was both pretty healthy and SUPER easy.  Would you like to hear about it?  I thought that you would…
Baked Tilapia with Panko Bread Crumbs Recipe
You’ll need:
2 fresh tilapia filets
1 cup panko bread crumbs
1/2 cup reduced-fat grated parmesan cheese
about 1 tbsp light mayonnaise
1 tbsp italian seasonings

Preheat oven to 350.  Mix panko crumbs, parmesan cheese and italian seasoning on a large plate.  Spread a very thin coat of the mayo on the tilapia filets and coat both sides with breadcrumb/seasoning mix.  Place in preheated oven for about 8-10 minutes on each side, until fish is white and flakey.  We served with asparagus (drizzled with olive oil & sprinkled with minced garlic, baked for about 15 minutes at 425 degrees) and brown rice.
